Sarah Di Lorenzo makes healthy chicken nuggets – with an air fryer

Air fryers are indispensable kitchen helpers. But they’re not only trendy, they’re practical too, and with a few simple tricks, you can turn naughty treats into healthy comfort food.

To help you cook up a storm, nutritionist Sarah Di Lorenzo has shared some delicious recipes you can make without the use of oil or added fats.

STUFFED PEPPERS

Ingredients

3 peppers

1 tablespoon olive oil

350 grams ground turkey

1/2 cup cooked brown rice

1/2 cup crushed cornflakes

3/4 cup marinara sauce

1/4 cup chopped flat-leaf parsley

1/2 cup grated parmesan cheese

1/4 cup grated mozzarella cheese

Coat the bast of an air fryer with cooking spray. Cut off the tops, deseed the peppers and set aside.

Heat the oil in a skillet, add the turkey and cook through. Add the rice and cornflakes, cook while warm. Stir in the marinara, parsley, and parmesan, then pour the mixture over the peppers.

Play in the Airfryer basket, add the tope and cook at 180 degrees for 8 minutes. Then add the mozzarella on top and cook for another 2 minutes.

AIR FRYER BANANA MUFFINS

Ingredients

2 ripe bananas

1 cup oatmeal

1/2 teaspoon baking powder

1/3 cup maple syrup

1 teaspoon of cinnamon

1 egg

1/4 cup olive oil

1/4 cup buttermilk

Mash bananas in a small bowl and set aside.

Whisk together the flour and maple syrup in a bowl then make a well in the center and add the oil, egg, buttermilk and then stir until combined. Next add the banana and berries.

Preheat air fryer to 180 degrees, then transfer mixture to muffin tin and fryer rack and cook for 8-10 minutes or until cooked through.

Brush the tops of the muffins with maple syrup, then serve.

HOMEMADE CHICKEN NUGGETS

Ingredients

2 chicken breasts, cut into 1-inch cubes

2 eggs

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1 teaspoon of salt

1/2 teaspoon garlic powder

90 grams of crushed cornflakes

cooking spray

Preheat the air fryer to 200 degrees for 10 minutes. Mix eggs, garlic, onion, pepper and salt. Place cornflakes in a shallow bowl. Dip each chicken cube into the egg, then into the cornflakes, pressing lightly to adhere the coating.

Next, place the chicken nuggets in the air fryer basket in a single layer, this may require a few batches. Spray nuggets with cooking spray and place in air fryer for 12 minutes or until crispy.

Remove and enjoy with your favorite sauce.

MISO SALMON

Ingredients

250 grams of salmon fillet

glaze

1 tablespoon of honey

1 tablespoon miso paste

2 teaspoons mirin

2 teaspoons sesame oil

1 teaspoon freshly grated ginger

1 teaspoon tamari

1 chopped garlic clove

1 tsp water

pepper

directions

Pat the salmon dry with a paper towel. Place the glaze ingredients in a bowl and marinate the salmon in the glaze for 30 minutes.

Line the bottom of the air fryer with parchment paper, making sure you only line the bottom of the basket and not the sides.

Place the salmon in the air fryer, best skin side down, and brush with the glaze. If it’s too much frosting, you can heat it up in a saucepan and let drizzle over until done.

Air fry at 200 degrees for 11 minutes.

Serve with brown rice and vegetables.
